Chickpea Chana Masala

Serves 4

2 tbsp coconut oil
1 onion (quartered and sliced)
Dash of chilli flakes
1 tsp each of cumin, garam masala, turmeric
2tsp dried coriander
3 cloves of garlic and a piece of ginger (both grated)
Can of chickpeas**
Can of plum tomatoes**
1 green pepper (sliced)
Juice of ½ a lemon
120ml water
A cup of rice**

What to do:

– Sautee onions for 10 mins with spices and herbs.
– Add garlic, ginger and chickpeas and cook for 2 mins.
– Bang everything else in!
– Cook for 25-30 mins.
– Serve with rice.
