Sticky Bran Cake

Sticky bran cake

This cake is similar to a malt loaf. Depending on what variation of fruit you use you can make it close to a sticky pudding and it is delicious with custard or cream.

You will need: **available at Scoop and Scales

100g of bran sticks or flakes **

250g mixed fruit **

(could include dates, apricots, raisins, sultanas, cranberries etc)

250ml any milk

250g soft brown sugar **

250g cups of self-raising flour ** Plain flour can be used just add a tsp of baking powder if you do.

Variations:

100g Chia seeds, add 50ml of milk if these are included

Nuts of any variety can be added instead of some of the fruit

100g Sesame seeds add for additional nutrition.




What to do:
  • Mix together the bran, fruit, sugar and milk and leave for 2 hours to allow the fruit and bran to soften.
  • Mix in the flour thoroughly and ensure there are no pockets of flour in the milk.
  • Grease and line a tin, this can be a tin of any size or shape.
  • Bake at 180deg C for 1 -1 1/2 hours
  • This should be a very moist cake
