As a running coach and all around wellbeing enthusiast, I will often make my own energy bars and flapjacks for running plus protein cookies. Why, they are much nicer than what you’ll buy in stores and a whole lot cheaper.
A couple of weeks ago, a running friend pointed me towards Scoop and Scales, best recommendation in a long time. As you wander around the store, it really does have everything you need, and being a gluten free household, everything is marked up perfectly.
Working from memory, I got all the ingredients I needed to make Protein Balls, flapjacks and protein cookies. The only items I need to buy elsewhere are peanut butter and maple syrup (note, they may have these but may have missed them, next time I’ll make a list).
Getting home, I had to throw some energy balls together to try, and clearly, the ingredients are well sourced by Scoop and Scales because they taste fantastic. But the ultimate surprise, as I wandered around, I was checking the per 100gm prices against Tesco, and all of the ingredients I bought where cheaper at Scoop and Scales.
I am a very happy coach today and can’t wait to try my other recipes with these ingredients, but these energy balls are a 100% positive start. I have put the recipe below in case you fancy giving it a little try.
Ingredients
Pecan 100g
Raisins 75g
Linseeds 1tbsp
Honey 1tbsp
Peanut Butter 2 tbsp
Cocoa Powder 1 tbsp
Maple Syrup 1tsp
Coconut to coat
Method
Blitz the Pecans to crumb in a blender
Add everything else (except coconut) and blend for a few seconds
Shape the ingredients into 8 ish balls, roll in coconut
Put in the fridge for 20 minutes.
